Scones

 

Ingredients


225g = 8oz of self raising flour
A pinch of salt
5mls = 1tsp of baking powder                                                        
40g = 1+1/2oz of butter or margarine
About 150mls = 1/4 of a pint of milk
A beaten egg or milk to put on the top to glaze.                                                    

Method

1: Sift the flour, salt and baking powder into a bowl.
2:Rub in the butter until it looks like fine breadcrumbs.
3:Stir in the milk ( a little at a time as you might not need all of it ) until it is a fairly soft, light dough.
4:Lightly flour a clean surface and turn out the dough on to it.
5:Roll out the dough until it is about 2cm's = 3/4 inch thick.
6:Cut into circles with a 6cm = 2+1/2 inch cutter.7:Put on a greased baking tray and brush the tops with the beaten egg or milk.
8:Put in the oven at 220c = 425f or gas mark 7 for about 10 minutes or until risen and golden.
9:Put onto a wire cooling rack and serve with jam and cream if wanted.

Hard/Easy

The hardest part of this recipe is getting the dough to the right consistency- if it does go too soggy add more flour until it seems right. The kids will enjoy mixing it and cutting out the circles themselves.
For alternatives to this recipe you can add the following to the mixture.
1:WHOLEMEAL SCONES = Replace half of the white flour with wholemeal flour.
2:FRUIT SCONES = Add 50g = 2oz of either currants, sultanas, or raisins or a mixture of all of them to the dry ingredients.
3:CHEESE AND HERB SCONES = Sift 5mls = 1tsp of mustard powder with the flour etc.Then stir in 50g = 2oz's of finely grated cheese ( cheddar ) into the mixture before adding the milk. After glazing the top of the scones sprinkle a little bit of cheese on the top.( you might find you need a bit more than 2oz's of the cheese to make the scones taste stronger, but this is up to you.)
